Ingredients
Spice mixture:
- 1 one 1.5 inch cinnamon stick
- 3-4 cardamoms (with shell)
- 2-3 peppercorns
- 2-3 cloves
- 1/2 teaspoon of ginger powder
Tea:
- 1 cup of water
- 1 teaspoon sugar
- 1 teaspoon of tea leaves
- ¼ teaspoon spice mixture (see above) (adjust to taste)
- ¼ cup of milk (adjust to taste)
Directions
Prepare the spice mixture:
- grind everything but the ginger into a powder and combine
Prepare the tea:
- Add water in pan.
- Add sugar, tea leaves and spices.
- Bring to a boil and simmer for a minute.
- Add milk.
- Bring to a boil and simmer for 3-5 minutes.
- Strain tea in teapot.
Notes
- This tea is made with water but can be made with all milk.
- In winter fresh ginger chai is very good, add a teaspoon of chopped ginger with the spices. You can also add pepper at the same time to give a warm feeling.
- The spice list is not complete. We usually add about 10 to 12 different types of spices for chai ground together. I am sorry I do not know the names of them in English.
