Ingredients
- 1 envelope unflavored gelatin
- ¼ c. cold water
- ¾ c. sugar
- ½ c. boiling water
- 6 oz. frozen orange juice concentrate
- 8 oz. soft tofu, drained
- 1 ½ cups (4 oz.) frozen whipped topping, thawed
- 1 can (11 oz.) mandarin oranges, drained
- mint sprigs
Directions
- In a small bowl, sprinkle gelatin over cold water; let stand 1 minute to soften.
- In a blender, process sugar, boiling water, and softened gelatin until gelatin is dissolved. Add juice concentrate and tofu; process until smooth. Pour into a large bowl. Refrigerate until mixture mounds slightly when dropped from a spoon (usually about one hour).
- Fold in whipped topping. Pour into six dessert dishes; chill until firm, 3 to 4 hours.
- Before serving, top with oranges and a mint sprig.
