Mandarin Orange Tofu Mousse

Ingredients

  • 1 envelope unflavored gelatin
  • ¼ c. cold water
  • ¾ c. sugar
  • ½ c. boiling water
  • 6 oz. frozen orange juice concentrate
  • 8 oz. soft tofu, drained
  • 1 ½ cups (4 oz.) frozen whipped topping, thawed
  • 1 can (11 oz.) mandarin oranges, drained
  • mint sprigs

Directions

  • In a small bowl, sprinkle gelatin over cold water; let stand 1 minute to soften.
  • In a blender, process sugar, boiling water, and softened gelatin until gelatin is dissolved. Add juice concentrate and tofu; process until smooth. Pour into a large bowl. Refrigerate until mixture mounds slightly when dropped from a spoon (usually about one hour).
  • Fold in whipped topping. Pour into six dessert dishes; chill until firm, 3 to 4 hours.
  • Before serving, top with oranges and a mint sprig.
