Lemon Chess Pie

Ingredients

  • 3 eggs
  • 1 c. sugar
  • ½ c. light corn syrup
  • 1/3 c. melted margarine
  • 1/3 c. sour cream
  • 1 T. corn meal
  • 1 T. fresh lemon juice
  • ½ t. vanilla
  • 1 unbaked 9-inch pastry shell
  • 1/3 c. coconut

Directions

  • Beat eggs and sugar in a mixing bowl.
  • Add corn syrup, melted margarine, sour cream, corn meal, lemon juice, and vanilla.
  • Pour mixture into pastry shell. Sprinkle coconut on the top.
  • Bake at 350 degrees for 45 to 50 minutes or until almost set.
