Ingredients
- 2 egg whites
- a pinch of salt
- ½ t. almond extract
- ½ t. vanilla (light vanilla works best)
- ½ c. granulated sugar
- 1 ½ c. semi-sweet chocolate (or mint) chips
- ½ c. pecans, chopped (optional)
Directions
- Preheat oven to 300 degrees F.
- Beat the egg whites until stiff.
- Add the sugar, salt, and extracts. Beat until very stiff.
- Fold in the chips and the nuts.
- Drop by the teaspoon-full onto an non-greased baking sheet.
- Put the pan into the preheated oven, close the door, then turn off the oven. Leave the cookies in the oven overnight (four hours minimum?).
Notes
- The first time I made these by myself, they didn’t cook quite enough (they were still soft).
