Diann's Meatloaf

Ingredients

  • 2 lbs. lean ground beef
  • ½ medium yellow onion, finely chopped
  • 2 celery stalks, finely chopped
  • ¾ cup seasoned bread crumbs (fine); can also use crackers
  • 1 clove garlic, finely minced
  • 2 Tbsp. Worcestershire sauce
  • 2 eggs
  • 2 Tbsp. catsup
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • salt and pepper to taste
  • additional catsup or BBQ sauce for coating

Directions

  1. Preheat oven to 375 °F.
  2. Mix all ingredients until combined.
  3. Pat into greased loaf pan or cake pan.
  4. Generously coat top and sides of loaf with additional catsup (can also use BBQ sauce)
  5. Cook until thermometer inserted into the center of the loaf reads 160 °F. Remove from oven and let rest 10 to 15 minutes. Serve warm with yummy sides.
