Ingredients
- 2 ½ Tbsp. olive oil
- 3 cloves garlic, minced
- 1 small onion, chopped
- ½ green bell pepper, chopped
- ½ red bell pepper, chopped
- 3 medium mushrooms, capped and sliced
- 28 oz. can tomatoes, coarsely chopped
- 12 oz. can tomato paste
- 1 ½ Tbsp. sugar
- 2 ½ tsp. basil
- 2 tsp. salt
- 2 tsp. oregano
- 1 tsp. thyme
- 1 Tbsp. Italian seasoning
Directions
- In a medium pan over medium heat, cook vegetables (onion, garlic, etc.) until tender (about five minutes).
- Stir in tomatoes and their liquid, tomato paste, sugar, spices, and salt.
- Reduce to low heat and simmer, covered, for about 20 minutes or until thickened.
