Yield: 2 loaves or 5 mini-loaves

Ingredients

  • 3 c. flour
  • 1 tsp. salt
  • 2 c. sugar
  • 4 large eggs, beaten
  • 1 ¼ c. oil
  • 1 tsp. baking soda
  • 3 tsp. cinnamon
  • 2 c. pumpkin (16 oz. can)
  • ¼ tsp. ground ginger (optional)

Directions

  • Combine the flour, salt, and sugar.
  • Add the eggs, oil, baking soda, cinnamon, and pumpkin.
  • Pour into 2 loaf pans or 5 miniature loaf pans.
  • Bake for 1 hour (for miniature loaf pans, 50 minutes) at 350 degrees F.

Notes

  • If you cook these until a toothpick inserted in the middle comes out clean, they will be overcooked.
