Ingredients
- 3 c. flour
- 1 tsp. salt
- 2 c. sugar
- 4 large eggs, beaten
- 1 ¼ c. oil
- 1 tsp. baking soda
- 3 tsp. cinnamon
- 2 c. pumpkin (16 oz. can)
- ¼ tsp. ground ginger (optional)
Directions
- Combine the flour, salt, and sugar.
- Add the eggs, oil, baking soda, cinnamon, and pumpkin.
- Pour into 2 loaf pans or 5 miniature loaf pans.
- Bake for 1 hour (for miniature loaf pans, 50 minutes) at 350 degrees F.
Notes
- If you cook these until a toothpick inserted in the middle comes out clean, they will be overcooked.
