Lemon Chess Pie

Ingredients
- 3 eggs
- 1 c. sugar
- ½ c. light corn syrup
- 1/3 c. melted margarine
- 1/3 c. sour cream
- 1 T. corn meal
- 1 T. fresh lemon juice
- ½ t. vanilla
- 1 unbaked 9-inch pastry shell
- 1/3 c. coconut
Directions
- Beat eggs and sugar in a mixing bowl.
- Add corn syrup, melted margarine, sour cream, corn meal, lemon juice, and vanilla.
- Pour mixture into pastry shell. Sprinkle coconut on the top.
- Bake at 350 degrees for 45 to 50 minutes or until almost set.
