Yield: about 24 cookies

Ingredients

  • 2 egg whites
  • a pinch of salt
  • ½ t. almond extract
  • ½ t. vanilla (light vanilla works best)
  • ½ c. granulated sugar
  • 1 ½ c. semi-sweet chocolate (or mint) chips
  • ½ c. pecans, chopped (optional)

Directions

  • Preheat oven to 300 degrees F.
  • Beat the egg whites until stiff.
  • Add the sugar, salt, and extracts. Beat until very stiff.
  • Fold in the chips and the nuts.
  • Drop by the teaspoon-full onto an non-greased baking sheet.
  • Put the pan into the preheated oven, close the door, then turn off the oven. Leave the cookies in the oven overnight (four hours minimum?).

Notes

  • The first time I made these by myself, they didn’t cook quite enough (they were still soft).
