Ingredients

2 to 3 c. self-rising flour 2 eggs 1/3 to ½ c. sour cream (or plain yogurt) milk

Directions

  • Stir flour, yogurt, and eggs together until the mixture is almost uniform.
  • Add milk and stir until the consistency is right. (Stir for about one hundred strokes; this is the religion part of the recipe.) Note that the batter should be quite thin, so that it pours on the pan in about a quarter-inch layer - any thicker and the outsides will cook too hard before the insides are done.
  • Cook on a skillet or pan on medium to medium-high heat until just golden on the outsides.

Notes

For blueberry pancakes, just toss them down into the pancakes just after you pour them on the pan. For maple- or cinnamon-flavored pancakes, add just a touch of maple flavoring or a half-teaspoon of cinnamon to the batter.

  • This batter also works well for waffles. No modifications are required.
  • When made with yogurt, these pancakes aren’t all that bad for you.
