Ingredients

  • 1 lb. ground beef
  • 28 oz. (1 jar ) commercial spaghetti sauce
  • ½ c. water
  • ¼ c. dry red wine (optional)
  • 8-10 lasagna noodles, uncooked
  • 3 c. (12 oz.) shredded Mozzarella cheese
  • ½ c. grated Parmesan cheese
  • 2 c. cottage cheese

Directions

  • Brown the ground beef. Drain.
  • Combine ground beef, spaghetti sauce, water, and wine. Spread one-third of this sauce in a lightly-greased 12”x8”x2” baking dish. Arrange 4 or 5 noodles on the sauce. * Layer one cup of cottage cheese and one cup of Mozzarella on top. Spoon on a half of the remaining sauce. Repeat, beginning with the noodles, for the next layer, ending with the sauce.
  • Sprinkle Parmesan cheese on top.
  • Cover with plastic wrap, venting at corner. Microwave at medium for 35 minutes, turning once.
  • Uncover and top with remaining 1 c. Mozzarella. Microwave at medium for 2 minutes to melt. Let sit for five minutes before serving.

Notes

  • Gail Dubovsky’s variant:
    • mix two eggs and 1 T. oregano with the cottage cheese
    • use half ground beef, half hot Italian sausage
    • spice spaghetti sauce with 2 T. Italian seasoning, ½ T. sugar, ½ tsp. garlic powder, ½ medium onion, and ½ tsp. chili powder
