Ingredients

1 c. oil 2 large eggs 2 c. sugar 2 ½ c. flour 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1 tsp. baking powder 3 c. diced apples 1 c. pecans or walnuts (optional) 1 c. (1/2 bag) butterscotch chips

Directions

  • Mix together the oil, eggs, and sugar.
  • In a separate bowl, sift together the flour, baking soda, salt, cinnamon, and baking powder.
  • Add the dry ingredients to the oil mixture.
  • Stir in the apples and optional nuts.
  • Mix well with a spoon.
  • Spread into 13x9 inch pan.
  • Sprinkle butterscotch chips on top of batter.
  • Bake at 350 degrees F for 35 minutes or until done.

Notes

  • For a reduced oil recipe, use ½ cup oil and ½ cup applesauce.
