Yield: 16 two-inch squares

Ingredients

  • 1 ¼ cups instant (or quick-cooking) oats
  • 6 Tbsp. honey
  • ¼ cup toasted wheat germ
  • ¼ cup whole wheat flour
  • ¼ tsp. salt
  • 2 tsp. cinnamon (optional)
  • ½ tsp. vanilla extract (optional)
  • ¼ - ½ cup raisins or other dried fruit (optional)

Directions

  • Preheat oven to 300 degrees F.
  • Mix dry ingredients together. Add wet ingredients (honey, vanilla) and stir until mixture is an even, crumbly consistency.
  • Spray an 8-inch square pan with non-stick cooking spray.
  • Gently press the mixture into the pan with the back of a spoon.
  • Cook 18-20 minutes or until lightly browned.
  • Cool to room temperature and cut.

Notes

  • The granola bars will be somewhat soft the first day. Store them in an air-tight container for a day and they will become properly crunchy.
