Ingredients
- 10 oz (small box) frozen spinach, thawed
- 2 c. (15 oz.) ricotta cheese
- 1 ½ c. mozzarella cheese, shredded
- ½ c. Parmesan cheese, coarsely shredded
- 1 ½ Tbsp Italian seasoning
- 1 tsp. garlic powder
- ½ tsp. salt
- ¼ tsp. black pepper, ground
- 1 egg, lightly scrambled
- uncooked manicotti noodles
Directions
- Mix together all ingredients but the noodles.
- Fill each noodle with the mixture.
- Place noodles in a single layer in a greased cooking dish.
- Pour your favorite sauce (mixed with 1 cup of water per 3 cups of sauce) on top of the noodles.
- Cook covered at 400 degrees F for 40 minutes, then uncover and cook for an additional 15 minutes.
- Garnish with cheese, if desired.
