Ingredients

  • 10 oz (small box) frozen spinach, thawed
  • 2 c. (15 oz.) ricotta cheese
  • 1 ½ c. mozzarella cheese, shredded
  • ½ c. Parmesan cheese, coarsely shredded
  • 1 ½ Tbsp Italian seasoning
  • 1 tsp. garlic powder
  • ½ tsp. salt
  • ¼ tsp. black pepper, ground
  • 1 egg, lightly scrambled
  • uncooked manicotti noodles

Directions

  • Mix together all ingredients but the noodles.
  • Fill each noodle with the mixture.
  • Place noodles in a single layer in a greased cooking dish.
  • Pour your favorite sauce (mixed with 1 cup of water per 3 cups of sauce) on top of the noodles.
  • Cook covered at 400 degrees F for 40 minutes, then uncover and cook for an additional 15 minutes.
  • Garnish with cheese, if desired.
