Ingredients
- 1 c. oil
- 2 large eggs
- 2 c. sugar
- 2 ½ c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 3 c. diced apples
- 1 c. pecans or walnuts (optional)
- 1 c. (1/2 bag) butterscotch chips
Directions
- Mix together the oil, eggs, and sugar.
- In a separate bowl, sift together the flour, baking soda, salt, cinnamon, and baking powder.
- Add the dry ingredients to the oil mixture.
- Stir in the apples and optional nuts.
- Mix well with a spoon.
- Spread into 13x9 inch pan.
- Sprinkle butterscotch chips on top of batter.
- Bake at 350 degrees F for 35 minutes or until done.
Notes
- For a reduced oil recipe, use ½ cup oil and ½ cup applesauce.
